A Sweet Potato Casserole You Will Not Forget

This happens to be my lovely mother-in-law’s sweet potato casserole recipe which she lovingly passed on to me! I have never tried anything that goes so perfectly with dinner and that I also crave for dessert afterwards! The best part about this recipe though, IT’S SO EASY! So, here it is!

Sweet Potato Casserole

Potato Mixture Ingredients

  • 3 cups mashed sweet potatoes
  • 1/2 cup melted butter (unsalted)
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup sugar
  • 1/2 cup milk
  • 2 eggs beaten

Topping Ingredients

  • 1 cup brown sugar
  • 1/3 cup butter (unsalted)
  • 1 cup chopped pecans
  • 1 cup flour

Directions

Pre-heat oven to 350 degrees.

Mix all Potato Mixture Ingredients together in a large mixing bowl until fluffy. Hand mixers & stand mixers work well but good ole’ fashion man power with a fork works just as great! When fluffy, or of a not ]-soupy consistency, spread in a baking dish (9×13 preferable) and set aside.

In a smaller bowl mix all Topping Ingredients together then spread over the potato mixture.

Bake casserole, uncovered, at 350 degrees for about 30-35 minutes (depending on dish size, more time for smaller dish because the casserole will be thicker.)
